Braised Pork with Abalone

The child said it's delicious, so I kept making it 😄

Ingredients

Abalone10 pieces
Bone-in Pork Belly (Black Pig)2 pounds
Farm Egg6 pieces
Rock Sugar5 tablespoons
Lee Kum Kee Soy Sauce4 spoons
Star Anise1 piece
Cinnamon Stick1 piece
Bay Leaves5 pieces
Ginger5 slices
Green Onion6 stalks

Beer2 cans

Steps

Wash all ingredients and set aside. Add a small amount of peanut oil to the pot, heat it, and add ginger slices, onion roots, then the washed and chopped meat. Stir fry until the fat is rendered out. This step is to extract the fat from the meat and use it to caramelize sugar. Stir until it looks like the picture, fry a little longer, take the meat out, discard the ginger and onion roots, leaving the oil in the pan to caramelize the sugar.

Add three tablespoons of rock sugar over low heat, and let it melt slowly.

Continue to simmer.

Simmer until it appears bubbly like the picture, indicating the caramel is ready. Add the meat and stir fry.

Stir fry over medium heat to render out as much fat as possible. As shown in the picture, fry a little longer, then add ginger, green onion, star anise, cinnamon stick, and bay leaves, and continue stir-frying.

Pour in two cans of beer, turn the heat to high, and bring it to a boil. After about 10 minutes of boiling, add the eggs.

(The eggs are pre-boiled, peeled, and pricked with a needle about 20 times.) Cook the eggs with the meat for about 10 minutes, then add soy sauce, two spoons of rock sugar, and bring it to a boil. Then reduce to medium-low heat and simmer. Once the eggs are colored, take them out to prevent them from becoming too hard. Continue to simmer the meat. I didn't keep track of time as I was also simmering a pot of soup on the side, but it's estimated to take about 40 minutes. Then add the abalone and eggs, stir-fry over medium heat, cover with a lid, and cook for another 5 minutes. Finally, turn the heat to high and reduce the sauce.

Sprinkle chopped green onion and stir fry. Once you can smell the rich aroma of green onion, turn off the heat and plate the dish. If you like the taste of green onion, this step is very important.
