Soak bamboo shoots overnight and cut into strips. Blanch pork belly and wash off the scum.

Heat oil in a hot pan, add sugar to caramelize, then add pork belly and stir-fry until caramelized.

After mixing evenly, season with salt, then add enough water to cover the bamboo shoots. Bring to a boil over high heat, then reduce to low heat and simmer for about 40 minutes.
