Bamboo Shoots and Braised Pork

Soak bamboo shoots overnight and cut into strips. Blanch pork belly and wash off the scum.
Cut bamboo shoots, very tender; these are bamboo shoots from a slender bamboo grove.
Heat oil in a hot pan, add sugar to caramelize, then add pork belly and stir-fry until caramelized.
When the meat releases oil and turns a bright red color, add green onion, ginger, garlic, cinnamon, star anise, and bay leaves.
After the meat releases its fragrance, add light soy sauce, dark soy sauce, oyster sauce, and cooking wine. Add bamboo shoots and stir-fry.
After mixing evenly, season with salt, then add enough water to cover the bamboo shoots. Bring to a boil over high heat, then reduce to low heat and simmer for about 40 minutes.
When the sauce is reduced, add green garlic leaves and green and red chili peppers for color. For a spicier taste, add some small chili peppers. It will taste even better.
