Black Pepper Dry Pot Shrimp

Ingredients

Freshwater Shrimp500g
GingerA large piece
GarlicTwenty small cloves
Cooking WineHalf tablespoon
Light Soy SauceOne tablespoon
Oyster SauceOne and a half tablespoons
Dark Soy SauceHalf tablespoon
SugarLess than half tablespoon
Crushed Black Pepperto taste

Clean the shrimp and trim off the whiskers and rostrum.

Place the shrimp in a large bowl. Add half tablespoon cooking wine, one tablespoon light soy sauce, one and a half tablespoons oyster sauce, half tablespoon dark soy sauce, and less than half tablespoon sugar. Mix well and marinate for about ten minutes.

Peel the garlic cloves, and slice the ginger.

Take a clay pot or a pot with good heat retention (I used an enameled cast iron pot). Place the ginger and garlic cloves at the bottom of the pot, then pour in about three tablespoons of cooking oil (enough to cover the bottom of the pot).

Lay the marinated shrimp in the pot. Pour the marinade from the bowl into the pot as well. Cover the lid, bring to a boil over medium-high heat, then simmer over low heat for about 10 minutes.

Open the lid and sprinkle with some crushed black pepper. Cover again and simmer for one minute. Open the lid, sprinkle with chopped spring onion, and serve the pot on the table. Ready to enjoy!

Cooking Tips

1. This is a dry pot dish, and no water is added during the process. Don’t worry about burning it; the oil and marinade, along with the natural moisture from the shrimp, will suffice. Simmering for 10 minutes on low heat won't cause it to burn. 2. Use enough cooking oil to cover the bottom of the pot, but don't overdo it; otherwise, it will taste too greasy. 3. Don’t miss out on the garlic cloves in the pot when eating. After being simmered in oil at high heat, the garlic becomes soft and slightly sweet, making it incredibly delicious. 4. Use crushed black pepper for this dish. Black pepper powder is not recommended as the flavor of crushed black pepper is more intense.
