Braised Pork Belly (Pressure Cooker Version)

I really enjoy eating this version of braised pork belly, so I learned how to make it from my mother-in-law.

Ingredients

Pork belly1000g
Scallion, ginger, garlic, dried chili, saltTo taste
Granulated sugar6 tablespoons
Cooking wine3 tablespoons
Braised soy sauce1 tablespoon

Cut the meat into chunks

Prepare the seasonings

Boil water in a pot, add the meat chunks and cook for 5 minutes. Remove and drain the water.

Pour oil into the pan. When the oil is almost hot, add 6 tablespoons of granulated sugar.

Stir-fry the sugar on low heat until it reaches the color shown in the picture. Be careful not to burn the sugar, though a little bit of burning is acceptable.

Add the meat to the pan and stir-fry. Then add scallion, ginger, garlic, salt, cooking wine, and soy sauce. Stir a few times.

Add enough cold water to cover the meat. Bring to a boil over medium heat, then reduce to low heat and cook for 8 minutes.
