Braised pork belly with tofu knots is a distinctive and traditional dish.

Prepare the ingredients. Blanch the pork in advance.
Add oil to the pot and heat on high.
Add scallions, ginger, garlic, rock sugar, red chili, and star anise to sauté until fragrant.
Add the pre-blanched pork belly (half lean, half fat) and stir-fry for 1 minute.
Stir-fry on high heat.
Add dark soy sauce for coloring.
Once the right color is achieved, it's ready.
Add a bit of light soy sauce.
Stir-fry until the flavors are absorbed.
Pour in beer, bring to a boil.
Simmer on low heat for 40 minutes.
Add tofu knots and simmer for another 20 minutes on low heat.

Simmer until the pork becomes very tender.
Open the lid and you'll be greeted with an amazing aroma. 😄
The color is enticing. At this point, the pork is no longer greasy and is very delicious. 😋
Plate it up and garnish with cilantro and chopped green onions.
