Braised Pork with Marinated Eggs

Cut the pork belly into appropriately sized pieces, wash and drain.
Place eggs in cold water, bring to a boil, then cook for another 5 minutes. After cooking, peel and make two cuts on each egg.
Place the pork in a non-stick pan and fry over low heat until golden brown and oil is released.
Pour out excess oil, leaving a little. Add scallion, ginger, and rock sugar, stir-fry over low heat until the sugar melts.
Pour cooking wine along the edge of the pan and stir-fry until it evaporates. Then add light soy sauce, dark soy sauce, cinnamon, and star anise, stir well.
Add the eggs and enough water to cover the ingredients. Simmer over low heat for about 1 hour. Add a little salt and reduce the sauce.
