Butterfly Pea Flower Fried Rice

Butterfly pea flowers are rich in vitamins A, C, and E, which can boost immunity, enhance skin elasticity and collagen production, support brain function, prevent stomach pain, and provide natural health benefits such as anti-depressant, stress-relief, calming, anti-convulsive, and mood-soothing effects. Recently, I’ve seen people making steamed buns, bread, and drinks with butterfly pea flowers, and they look absolutely stunning! So, I tried making fried rice with them, and not only did it turn out visually appealing but also delicious. Available on Taobao.

Soak the butterfly pea flowers in water until the water turns a deep blue color.

Cook rice using the butterfly pea flower water. I used Joyoung Light Rice, which has excellent texture.

Cut ham and carrot into small cubes. Remove corn kernels and blanch them along with the carrot cubes and peas in boiling water for a moment. Drain well.

Beat the egg and mix with a small amount of water. Heat a small amount of oil in a pan, quickly scramble the eggs, then set aside.
