Cheese Coconut Bread

Inspired by a recent trip to Weidomei, I bought a bunch of bread and tried them one by one at home. I love the taste of cheese and coconut flakes! So, I developed this recipe myself. After baking, I made one and felt it was pretty good, so I decided to share it with everyone! This was also first released in 2015. ╮(╯▽╰)╭

Ingredients

High-gluten flour250g

Heavy cream80g
Yeast4g

Filling: Cream cheese85g

Steps

Add all dough ingredients except butter to the bread machine, select the dough function, and knead for 10 minutes.

Then add the butter and continue kneading. This step takes 30 minutes. After kneading, use the bread machine's dough function to ferment for 1.5 hours.

Take out the dough, knead to release air, and let it rest for 10 minutes.

Divide into 6 portions of 70g each.

Add the filling.

Seal tightly.

Roll the remaining dough into strips.

Braid the strips.

Wrap the braid on the dough, then place in the oven at 40°C for 40 minutes with a bowl of warm water. After proofing, brush with whole egg liquid.

Bake at 180°C for 20 minutes.

For the filling: Beat cream cheese and sugar until smooth, add egg liquid and mix well. Finally, add coconut flakes and mix evenly. Then refrigerate it. Take out when ready to use.

Cooking Tips

The dough is kneaded in two parts: one using the bread machine's dough function and another for fermentation. If you don't have a bread machine, knead until elastic. The dough contains 30g of sugar, which I think is not too sweet, so no need to reduce the amount. If you have a sweet tooth, you can add 5g more or sprinkle powdered sugar when eating. You can skip the braiding step to save time and make 7 individual buns instead. After baking, let them cool and store in a sealed bag.
