Chocolate Cupcake
Beginner-friendly lazy method to save washing a few bowls~ (Replace cocoa powder with an equal amount of low-gluten flour for plain cupcakes)
Ingredients
5 egg yolks5 egg whites
40g corn oil50g sugar (for egg whites)
25g sugar (for egg yolks)to taste
15g cocoa powderto taste
70g low-gluten flourto taste
40g water (milk can be used instead)to taste
Steps

Whip the egg whites; add 50g of sugar in three batches

Add cocoa powder, water, oil, and sugar to the egg yolks (mix in a 'Z' motion)

After mixing the egg yolk mixture, gradually add low-gluten flour and mix

Add one-third of the egg whites to the mixture (mix using a folding technique)

Pour the combined mixture back into the remaining egg whites and fold gently

Final product: fill cups 80% full to prevent overflow during rising~
