Cola Chicken Wings (Oil-Free with Ginger Version)

This dish is highly recommended. Not only do children love it, but even the elderly would enjoy it. It's also perfect for people on a diet since it doesn't require a drop of oil. The first time my niece ate these chicken wings, she astonished everyone by eating 7 wings, scaring my mom into repeatedly saying: "Stop eating, stop eating." My 3-and-a-half-year-old godson, who is a picky eater, devoured this dish, even mixing the remaining sauce with a bowl of rice and finishing it clean. So, if you have a child at home who struggles with eating, give this a try. On a cold winter day, this dish is perfect for the dining table. Don't underestimate its charm! It really tastes much better than regular cola chicken wings! The original recipe is from Wen Yi.

Ingredients

Chicken mid-joint wings500g
Sugar2g
LemonHalf
Ginger1 large piece
Cola1 can
Salt2g
Light soy sauce2 small spoons
Dark soy sauce1 small spoon

Steps

Place the chicken wings in a large bowl, then squeeze the lemon by hand to extract as much juice as possible, mix well, and let sit for 3-5 minutes.

Heat a non-stick pan and place the chicken wings in it directly, with the skin side facing down first.

Once the oil starts to release, flip the wings and fry on the other side.

Add the shredded ginger to the pan and stir-fry with the chicken wings for about 30 seconds.

Simmer over medium heat for about 10 minutes, then turn to high heat to reduce the sauce.

Cooking Tips

1. Slashing or cutting the chicken wings helps them absorb the flavors better. 2. Using lemon juice removes the gamey smell, helps tenderize the meat, shortens frying time, and enhances the flavor. 3. Start frying with the skin side facing down, but make sure to use a non-stick pan. 4. Chicken wings will naturally release a lot of oil, so don’t add any extra. There’s already plenty of oil. 5. Don’t add too much sugar as the cola already contains a lot of it. You can even skip the sugar if you prefer less sweetness. 6. Feel free to add more ginger as the combination of cola and ginger will surprise you with its flavor. 7. Skim the foam from the sauce using either a spoon or a crumpled piece of foil, which can collect the foam when flattened and placed on the liquid. It’s a simple trick. 8. Simmering over medium heat allows the flavors to penetrate, and then reduce the sauce over high heat. The sugar in the cola will help it thicken quickly. 9. The sauce tastes amazing when mixed with rice.
