Coke Braised Pork

Coincidentally, there's no sugar at home, but for southerners, sugar is the soul seasoning for braised pork! So I thought, why not make a special version? Use the newly bought Coca-Cola! No need for sugar or dark soy sauce! Prepare all the ingredients.
First, blanch the pork belly. My suggestion is not to cut it; put the whole piece directly into the pot. It's easier to shape after blanching. Add pork belly, ginger slices, scallion, and cooking wine to a pot of cold water and bring to a boil.
Boil on high heat for 20 minutes until the meat is fully done with no blood inside. Then remove and rinse off the scum, and cut into cubes for later use.
Clean the pot and heat it up again, adding an appropriate amount of oil.
Add ginger and pork belly cubes, and fry until golden brown.
Fry each side of the pork belly until it turns a beautiful golden brown, then drain the excess oil.
Add light soy sauce and cooking wine, and stir-fry evenly.
Then add a can of Coca-Cola. No need to add water, sugar, or dark soy sauce! Super convenient!
Bring to a boil, then simmer on low heat for 40-50 minutes.
Simmer until the meat is tender, then turn up the heat to reduce the sauce until it becomes thick.
