Clean the pork belly and drain, slice two pieces of ginger.
Prepare the sauce: 2 tablespoons of cooking wine, 1 tablespoon of dark soy sauce, 2 tablespoons of light soy sauce, a small spoonful of spice mix, or use two star anise if unavailable. Pour in about half a bowl of Coke; if using a can, roughly half a can.
Heat the pan and add some oil, add ginger slices, then stir-fry the pork belly until it changes color, and pour in the sauce.
Mix well, then simmer on low heat for half an hour. Use chopsticks to poke the lean meat; if it pierces through, it's done. Open the lid and reduce the sauce over high heat. Taste for saltiness, and add a bit of salt if necessary.
Dish out and plate, sprinkle with sesame seeds or chopped green onions for garnish. It's sweet, fragrant, and not greasy.
