Cold Stirred Houttuynia

Steps

Trim off the old roots and whiskers of the houttuynia, keeping the tender white roots and leaves. Rinse several times with water to remove any dirt or sand, then soak in cold water for 5 minutes. Drain and set aside.

Take a small bowl and finely chop the garlic and chili peppers.

Add one spoon of vinegar.

Add two spoons of Maggi soy sauce.

Add a little sesame oil, one spoon of salt, one spoon of sugar, and one spoon of chicken bouillon. If you have fried chili oil, add a little of that too.

Cooking Tips

1. Houttuynia, also known as 'fish mint', is a perennial herb that grows 30–50 cm tall. It is mainly produced in southern provinces along the Yangtze River in China and is an important and widely used medicinal herb, earning the title 'King of Herbs'. Houttuynia is also called zheergen, chameleon plant, dokudami, and others, named for the fishy smell its stems and leaves emit when crushed. 2. If anyone in your family or among your friends is experiencing constipation, you can try boiling houttuynia water for them. Use about 100g of houttuynia with a little rock sugar. Do not boil for too long — bring to a boil, then simmer for 2–3 minutes before turning off the heat. The resulting houttuynia water will be pale red or yellow with a light fragrance. Drinking it for 2–3 continuous days should help. 3. This recipe can also be used to help with wind-heat colds because houttuynia has detoxifying and diuretic effects. 4. Houttuynia should not be cut with a knife. Instead, break it into small pieces by hand. If the houttuynia is tender enough, you can eat it whole.
