Haven't cooked for a long time. Xiaobai said yesterday that he wanted to eat my braised pork, so today I made some to satisfy his craving! Added dried tofu skin that Xiaobai loves—the result is amazing!

Fresh pork belly, take a cold shower (wash it clean), and cut it into small pieces for braised pork. Put the pork belly in cold water, add scallion, ginger, and cooking wine, and blanch it.

After blanching, stir-fry the pork belly over medium-low heat in a pan until it turns a charming caramel color. No need to add oil—the pork belly has enough fat!

Show off the pre-prepared ingredients: bay leaf, cinnamon, Sichuan peppercorns, and dried chili—just a little for flavor. If you don't have all of them, it's fine. Just having dark soy sauce, light soy sauce, and salt is enough. Keep it simple, haha!

Add a little oil to the pan, a small handful of rock sugar, and stir-fry over low heat to caramelize. Add the bay leaf, cinnamon, Sichuan peppercorns, and dried chili to stir-fry until fragrant. Add the pork belly and stir-fry to coat with color. Then add boiling water, salt, and simmer over low heat for 15 minutes. Add pre-soaked dried tofu skin and simmer for another 20 minutes. Finally, turn up the heat to reduce the sauce!
