1. When cutting pork chunks for braised pork belly, do not cut them too small as they will shrink during cooking, so keep the size in mind. 2. Blanch the pork chunks in cold water to remove unpleasant odors; during stewing, use boiling water and simmer on low heat for tender and flavorful meat. 3. Salt can be omitted if the soy sauce is salty enough. If it's too sweet, a little salt can be added to balance the flavor. The finished dish should have a savory taste with a hint of sweetness.
