Prepare the necessary ingredients:
Cut the pork belly into chunks.
Slice the ginger.
Boil the pork chunks in cold water, add ginger slices and Hua Diao Wine, bring to a boil, then remove.
Pour Doroli Triple Benefits Sunflower Oil into the pan.
Add rock sugar, stir on low heat to caramelize the sugar.
Keep stirring with a spatula, the syrup will gradually turn reddish-brown.
Add the pork chunks into the pan, coat them evenly with the caramelized syrup until lightly golden.
Add scallions, ginger, star anise, and cinnamon, stir to release aroma.
Add Hua Diao Wine, light soy sauce, and dark soy sauce, stir evenly.
Pour in enough boiling water to cover the ingredients.
Bring to a boil on high heat, then reduce to low heat and simmer for about 45 minutes.
Uncover and reduce the sauce, remove scallions, ginger, star anise, and cinnamon.
Add salt to adjust the flavor.
Thicken the sauce until it clings to the meat, then it's ready to serve!
