Braised pork is a dish loved by many families, and each household has its own preferred cooking method. Today, I made a pot of braised pork with dried string beans that I sun-dried myself. It's incredibly fragrant! The dried string beans soak up the pork belly's oil, making the whole dish rich but not greasy, tender, and full of flavor. Meanwhile, the dried string beans themselves absorb the broth, making a perfect match. I accidentally ate two extra bowls of rice at lunch today 💪(◎൧◎💪 ) Feeling strong.

Ingredients

Pork belly with skin700g
Dried string beans100g
Ginger5 slices
Garlic1 bulb
Star anise2 pieces
Bay leaf1 leaf
Cinnamon stick1 segment
Dried chili3-5 pieces
Rock sugar1 piece, about 25g
Soy sauce4 tablespoons
Dark soy sauce1 tablespoon
Oyster sauce3 tablespoons
Cooking wine4 tablespoons
SaltTo taste

Prepare the main ingredients: rinse and drain the pork belly with skin, then cut it into appropriately sized pieces. Soak the dried string beans in warm water until softened.

Heat 10g of oil in a pan. Add ginger slices, garlic cloves, star anise, cinnamon stick, bay leaf, and dried chilies (optional), and sauté over low heat until fragrant.

Add the pork belly pieces to the pan and cook until the skin becomes slightly translucent and the lean meat develops a slight caramelization.

Drizzle in the cooking wine and stir-fry to remove any unwanted meaty smell.

Add soy sauce, dark soy sauce, oyster sauce, and rock sugar, and stir-fry to coat the pork evenly with color and flavor.

Pour in enough water to cover the pork. Add the soaked dried string beans to the pot. Cover with a lid.

Simmer for about 40 minutes until the sauce thickens and the braised pork becomes a shiny reddish color, filling your kitchen with an irresistible aroma (¯﹃¯). You can adjust the seasoning with a bit of salt to taste before turning off the heat.
