Scallion Pancakes/Flatbread Using Dumpling Wrappers [Reusing Dumpling Wrappers]
Every time we make dumplings at home, there are a bunch of leftover dumpling wrappers, which feels wasteful to throw away but also hard to use up. And every time we make scallion pancakes/flatbread, we have to knead and fold the dough, and it’s not guaranteed to have perfect layers. So why not reuse those dumpling wrappers! It’s quick and convenient! Plus, the taste is exactly like the ones sold outside—identical! Each bite lets you feel the layers! Finely chop the scallions.
Take one dumpling wrapper, lay it flat, and brush a thin layer of oil. No need to apply it too thickly.
Take a pinch of fine salt and sprinkle it evenly. Don’t use too much, just a little, and make sure to spread it out evenly instead of clumping it together.
Sprinkle chopped scallions on top.
Take another dumpling wrapper and place it on top. Remember to press out any air between the layers!
Repeat step 2: brush oil, sprinkle salt and scallions, and layer with another dumpling wrapper. Build as many layers as you like! Ten or twenty layers are fine! (Note: Sprinkle salt every 1-2 layers instead of every layer to prevent it from being too salty if you use many layers.)
After layering, it should look like this! Note: You don’t need to brush oil or add anything to the last layer.
Roll it out with a rolling pin. Roll to your desired thickness. Remember to flip and roll alternately, or the bottom layer might not flatten!
Heat oil in a pan. You can add a bit more oil for a crispier surface.
Place the rolled-out pancake in the pan. Use medium heat.
Fry until both sides are golden brown, and it’s ready! Look at those visible layers!
Cut into pieces, or fry an egg and add some fillings along with salad dressing or ketchup to make a wrap—it’s ready to enjoy!
