Super Tasty Stir-fried Peppers and Eggs
What's the simplest dish? Of course, it's stir-fried peppers and eggs! Coming home late from work without time to shop for groceries, opening the fridge and finding eggs and peppers, I decided to make the simplest stir-fried peppers and eggs. The peppers are fragrant and appetizing, the eggs are tender, and it's hard to resist having two extra bowls of rice‼️

Beat the eggs with salt and cooking wine until well mixed.
Heat oil in a pan; when hot, reduce to low heat and pour in the egg mixture.
Keep the heat low and use a spatula to gently push the egg mixture around for an extra tender texture.
Once set, remove from the pan.
Leave a bit of oil in the pan, add in the pepper strips, and stir-fry until just cooked.
Add a small spoon of salt for seasoning.
Add the eggs back in, stir-fry until evenly mixed.
Serve.
