Baked Savory Oats with Soft-Baked Egg & Veggies [Healthy One-Pan Meal]
Usually baked oats are made sweet, which can get a bit boring. Try this pizza-flavored savory baked oats instead: the egg turns out soft and tender, and the oats with mixed vegetables taste like pizza but not greasy, and keep you full for longer. Prep it at night, crack an egg on top in the morning and pop it into the oven while you wash up—when you’re back you’ll have a hot, soft, comforting baked egg-and-oats waiting for you, which is extremely satisfying.

Mix the oats with the water and soak for 1 hour, or cover with plastic wrap and refrigerate overnight.
Slice the cherry tomatoes into rounds, dice the pickled cucumber, and cut the broccoli into small florets.
Sprinkle on the seasonings (salt, black pepper, basil, oregano, parsley, etc.) according to your taste, and add chopped ham.
Mix everything together with the soaked oats to form a batter-like mixture.
In the center of the oat–vegetable mixture, press out a shallow well for the egg so the middle is lower than the sides. Crack an egg into the well.
Sprinkle grated cheese around the egg.
Bake at 180°C for about 20 minutes for a texture similar to a poached egg, or about 25 minutes for a semi-set yolk. Adjust the baking time according to your preference. Mixing the poached-style egg into the oats and vegetables is also very tasty.
