Braised Pork Belly with Rice Cooker

Add two tablespoons of cooking oil into the pot and heat over medium-low heat. Add crushed yellow rock sugar and heat until the sugar melts and turns caramel-colored (white sugar can be substituted, but it will be slightly sweeter). Add diced pork belly and coat it evenly with caramel while browning all sides until golden. The caramelization is done!
Pour in a can of beer 🍺 to submerge the braised pork belly. Add ginger slices and chunks of green onion. Bring to a boil over high heat.
Add bay leaves and star anise and let it boil for 1-2 minutes.
Pour everything into the rice cooker. Set it to the cooking mode and braise for 45 minutes. During this time, you don’t need to worry about it. The rice cooker will reduce the sauce and keep it warm, making the pork belly even more flavorful without overcooking it.
