Prepare the ingredients
Cut the pork belly into small pieces, wash, blanch, and set aside
Add a little oil to the pan. Once hot, add the rock sugar and stir until melted
Add the blanched pork belly and stir-fry to coat with the sugar color. Add some cooking wine and soy sauce, stir well
Mix two cubes of fermented tofu with a little of its liquid until smooth
Pour into the pan, then add scallion, ginger, and bay leaves. Stir-fry quickly
Add hot water to cover the pork. Simmer over low heat for about 40 minutes. For softer pork, simmer longer. Prevent drying out by adding more water if needed. Once the pork is tender and the sauce thickens, it's ready to serve
