Crispy Fried River Shrimp

river shrimp500 g
salt5 g
cooking wine5 g

starch20 g
ground Sichuan pepper5 g

Rinse the shrimp clean, then marinate with cooking wine, salt, and ground Sichuan pepper for 15 minutes.

Put the flour and starch in a bowl, then crack in one egg.

Add an appropriate amount of water and mix into a batter like in the video.

Pour the marinated shrimp into the prepared batter and stir until evenly coated.

Heat oil in a wok. Once hot, turn to low heat and add the shrimp to fry. Keep the heat low the whole time and turn them frequently.
