Ginger Scallion Stir-Fried Crab

Clean the crab, remove the heart, lungs, gills, and other impurities, and chop into small pieces.

Marinate with pepper and Shaoxing wine, then coat evenly with dry cornstarch.

Cut scallions into segments and ginger into strips.

Heat the pan, pour in oil, and when the oil is about 70% hot, add the crab.

Stir-fry the crab until golden on both sides, then remove and set aside.

Cooking Tips
1. Crabs are quite dirty; be sure to remove the heart and lungs thoroughly before cutting them into pieces.
2. When frying crab, use high heat to cook it thoroughly until golden.
3. Make sure there's a bit of sauce when stir-frying so the cornstarch slurry can coat the crab well.
