Clean the crab, remove the heart, lungs, gills, and other impurities, and chop into small pieces.

Cooking Tips

1. Crabs are quite dirty; be sure to remove the heart and lungs thoroughly before cutting them into pieces. 2. When frying crab, use high heat to cook it thoroughly until golden. 3. Make sure there's a bit of sauce when stir-frying so the cornstarch slurry can coat the crab well.
