Glass Noodle Dumplings
Dumplings and glass noodles are two very popular foods here in China so the combination of them both just makes perfect sense. A pork and glass noodle filling wrapped in traditional Chinese dumpling pastry then steamed and served, this dumplings recipe is a must-have on your menu now the colder weather is coming. Prepare all ingredients.
Mix all dough ingredients in a mixer to form a dough. Let it rise at a temperature of 26-28℃ for 20-30 minutes, then knead into a smooth dough.
Soak dried glass noodles in hot water.
Rinse with cool water and chop finely.
Mix the remaining filling ingredients together.
Add the chopped glass noodles and mix well.
Roll the risen dough into a long strip.
Divide into pieces of approximately 40g each (adjust size as desired). Shape into balls, flatten, and roll into wrappers.
Place about 30g of filling in the center of each wrapper.
Pinch pleats.
Seal the openings.
Prepare a steamer with cold water. Place the dumplings on the steamer rack.
Bring water to a boil on high heat and steam for 7-8 minutes. Turn off the heat, let sit for 1 minute, and serve.
