Golden Sweet Potato Cake Bars
Golden sweet potato cake bars made into strips are very convenient to carry and eat. Paired with the crispy biscuit base at the bottom, they are even more delicious. Everyone can give it a try (this recipe is translated from the Japanese cookpad website). We regularly have free live video courses. The schedule will be announced on Weibo. You can follow my same-name Weibo: Emily's Baking Life.
Ingredients
Steps
Crush the biscuits into fine crumbs, then mix well with melted butter in a bowl.
As shown in the picture, line the baking tray with parchment paper. Pour in the mixture from Step 1, evenly press it down to fill the tray, then refrigerate it.
Cut the sweet potatoes into small round pieces, boil in water until softened.
Peel the sweet potatoes while hot and mash them.
Add all the other ingredients into the pan and mix evenly.
Heat on low while stirring the mixture continuously for 2-3 minutes, then turn off the heat.
Strain through a sieve (you can skip this step if you like a chunky texture). The sweet potato mixture is ready.
Place the mixture from the pan into the baking tray prepared in Step 2. Cover with cling wrap and press it flat using your hands.
Smooth the surface as shown in the picture.
Mix the egg yolk for coloring with a teaspoon of water, then use a brush to evenly coat the surface with it.
Bake in a preheated oven at 200°C for about 20 minutes until the surface turns golden. Refrigerate briefly, then remove from the tray.
Cut as shown in the picture: divide into 9 long pieces lengthwise, then cut across the middle. Let it sit at room temperature for a while before serving for the best flavor.
Done! Just looking at these golden sweet potato cake bars boosts your appetite!
