Accordion Potatoes with Baked Bacon
Potatoes can be prepared in various ways—cold salad, stir-fried with vinegar, braised, stewed, etc. It can be said that potatoes are among the most popular vegetables. Paired with lettuce rich in vitamin C and complemented by flavorful smoked meat, the result is crisp, refreshing, and exceptionally delicious. The ingredients and preparation are simple; this clever combination perfectly presents a very popular dish on the dining table. Bacon, widely used in Western cuisine, is smoked pork belly that has been coated with spices and sea salt and then naturally air-dried. Its fat distribution is even, smooth yet not greasy, moderately salty, and packed with flavor.

Wash the potatoes and place two chopsticks underneath. Cut them into 0.5cm slices without cutting through the bottom.
Wrap the potatoes in foil. Preheat the oven and bake at 250°C/480°F on the middle rack with top and bottom heat for about 30 minutes.
Cut the bacon into slices and mix with cumin powder and olive oil.
Remove the foil and insert the bacon slices between each potato slice.
Sprinkle cumin powder and salt on top, then brush a layer of olive oil.
Place back in the oven without foil and bake at 200°C/390°F for about 15 minutes.
