Homemade Gluten Braised Pork

Ingredients, no ginger at home.
Blanch the pork belly.
Caramelize the sugar.
Stir-fry until golden brown.
Add pork belly and cooking wine to stir-fry. Be careful during this step as the hot oil can splatter, which may cause burns.
Stir-fry the pork belly until oil is released, then add the spices.
Stir-fry until slightly golden brown, then add light and dark soy sauce.
Add hot water to cover the pork.
Add some rock sugar and oyster sauce now. Avoid adding salt at this stage, as light soy sauce, dark soy sauce, and oyster sauce already contain salt. Adjust the salt later if needed.
Add the remaining ingredients. Unfortunately, I don't have ginger at home today.
Simmer on low heat for 30 minutes, then add gluten. At this point, you can taste and adjust the seasoning. I like to add side dishes like gluten or dried tofu that absorb flavor and can withstand long cooking.
Continue simmering on low heat for 40 minutes. Add a little chicken powder before serving, or omit if you prefer. This fragrant homemade gluten braised pork is ready! My kids can eat two bowls of rice with the sauce.
