"Longing for Life" Huang Lei's Braised Pork
A good friend of mine loves watching "Longing for Life". Ever since I tasted various dishes from the show at her place, my fondness for the program has greatly increased. And, I secretly learned how to make this braised pork.

Cut the pork belly into chunks
Pan-fry all sides over low heat until golden brown. No need to add oil while frying.
Pour a bottle of yellow wine into the pot and bring to a boil
After the wine boils, add the pork belly, light and dark soy sauce to taste, ginger slices, then reduce to low heat, cover, and simmer for one hour.
Add rock sugar and salt to taste, continue simmering on low heat for ten minutes.
Turn up the heat to reduce the sauce.
Serve. The pork is crystal clear, melts in your mouth, not greasy at all—so delicious!
