Ingredients

Low-gluten flour110 grams
Oatmeal (preferably with nuts)60 grams
Raisins45 grams
Baking powder1/4 teaspoon
Baking soda1/4 teaspoon
Cinnamon powder (a must)1 gram
Egg40 grams
Vegetable oil (corn or sunflower oil)45 grams
Brown sugar (or red sugar)30 grams
Granulated sugar45 grams

Steps

Pour vegetable oil and beaten egg into a large bowl.

Add brown sugar and granulated sugar. Mix thoroughly without whisking.

In another bowl, mix flour, oatmeal, raisins, baking powder, baking soda, and cinnamon powder evenly.

Pour the mixture from Step 3 into the blended liquid of Step 2. Gently mix with a spatula until it becomes a moist batter.

Lightly dust your hands with dry flour, take a portion of dough, roll it into a ball, and press it flat on a baking sheet.

Cooking Tips

1. The dough for these cookies is relatively moist, so you'll need to dust your hands with flour when shaping them. 2. If you don't have baking soda, you can replace it with an equal amount of baking powder. 3. Freshly baked cookies may be slightly soft inside but will become crispy after cooling. If they remain soft after cooling, it indicates that the baking time was insufficient, and they need to be baked a little longer.
