[Joyoung Enamel Cast Iron Pot] Red Wine Braised Beef

Clean and cut the beef brisket into chunks, soak in cold water to remove blood, and drain well.
Cut mushrooms in half, onions into large chunks, smash and peel the garlic, cut carrots into rolling pieces, and celery into about 2cm lengths. Set aside.
Select the enamel braising function on the Joyoung enamel cast iron cooker. Once heated, sear the beef chunks in butter until slightly browned on the surface, then remove.
Sauté the onion and garlic in the pot until fragrant. Add carrots, celery, and mushroom chunks and stir-fry until the vegetables change color.
Add the seared beef back into the pot. Stir in tomato paste, red wine, thyme (fresh or dried thyme can be used), and bay leaves. Add boiling water just enough to cover the beef. Season with black pepper and salt, mix well, and cover.
Re-select the enamel braising function, and after 1.5 hours, it's ready to serve~
For a thicker sauce, open the lid and reduce the sauce during the last five minutes of cooking.
