Braised Pork with Dried Bamboo Shoots

My kids love this braised pork dish. Eating the meat with the sauce over rice is absolutely delicious 😂😂😂

Ingredients

Dried bamboo shoots10g
Pork belly600g
Scallion1 stalk
Ginger5 slices
Dark soy sauce2 tbsp
Star anise2 pieces
Rock sugar10g
Sichuan peppercorns8 pieces

Blanch the pork belly with cooking wine until scum forms. Rinse with clean water and cut into cubes. Soak and clean the dried bamboo shoots, tear them apart and cut into sections. Cut the carrots into chunks.

Heat oil and fry the pork belly until golden brown to remove excess fat (health comes first) 😄😄

Pour out excess oil, leaving a little. Add rock sugar to the cold oil and stir-fry over low heat until completely melted.
