Cooking Tips

Make sure the water is boiling before placing the batter in the steamer, and steam at high heat continuously∩_∩. I find this cake truly amazing—simple, non-greasy, and incredibly smooth and delicate in texture with a subtle fragrance, suitable for all ages. This time I used a hard mold, which is slightly coarse. Using soft molds like foil molds may result in a taller and more visually appealing cake. (Note: Do not use too much custard powder, as it can affect the taste!)
