Mapo Tofu Rice Bowl
Even a single-serving rice bowl can feel ceremonial. Recently, as the weather gets warmer, heavy meats are less appealing during lunch, and a Mapo Tofu Rice Bowl seems like a great choice. I gave the rice a cute 'cat' shape. Adults can also indulge themselves with a little joy once in a while. Today, I used McCormick's Mapo Tofu sauce—it’s super convenient. Simply add minced meat, tofu, and the McCormick Mapo Tofu seasoning into a pan, simmer for 2-3 minutes, and it’s ready. The sauce dissolves quickly without sticking to the pan, offering authentic Sichuan-style cuisine: fragrant, spicy, and perfect with rice. Each pack is the perfect amount—ideal for cooking beginners. Pour 100ml of water into McCormick Mapo Tofu sauce, mix well and set aside. Dice the tofu into small cubes.
Heat a wok, add cooking oil, and stir-fry minced pork until its color changes. Add dried chili slices and Sichuan peppercorns, stir-frying to release the aroma. Add tofu and the prepared McCormick Mapo Tofu mixture.
Simmer on low heat for 2-3 minutes until the sauce slightly thickens.
Turn off the heat, then sprinkle some chopped green onions over the dish.
Next, prepare the cat-shaped rice. Get your cooked rice and some nori sheets ready.
Place a round-bottom bowl or cup in the center of a plate, cover the rice with plastic wrap and shape it into a circular ring. Wrap a small pinch of rice in plastic wrap to form the cat ears. Cut the nori into ear, eye, nose, and whisker shapes and attach them to the rice.
Place the prepared Mapo Tofu in the center of the rice. Done~ Time to eat!
