Mapo Tofu (Lao Gan Ma Version)

Tofu1 piece
Green onion1 stalk
Lao Gan Ma2 tablespoons
Garlicto taste

Prepping ingredients: Cut tofu into cubes and blanch briefly to remove beany taste. Slice green onion and mince garlic for later use.

Heat oil in a pan over low heat. Add minced garlic and sauté until fragrant. Add 2 tablespoons of Lao Gan Ma and stir-fry until aromatic. Pour in hot water until it's level with the tofu.

Bring to a boil, then reduce to medium-low heat and simmer for about 15 minutes. Adjust salt to taste. Finally, turn up the heat to reduce the sauce and prepare to serve.

Plate the dish, sprinkle with green onion, and serve with a bowl of fragrant rice. Perfect!

Cooking Tips
Cut the tofu into smaller cubes for better presentation and faster flavor absorption.
Some cooks mentioned the dish didn't turn out well, so here are two extra tips I usually pay attention to:
1. If there's still too much broth after 15 minutes, simmer longer or reduce the sauce more.
2. Avoid using very firm old tofu.
