Matsutake Egg Custard

Matsutake is a rare and precious natural edible mushroom, known as the 'king of mushrooms'! Matsutake is not only nutritionally balanced and rich, but also offers various health benefits such as boosting immunity, anti-aging, beauty enhancement, promoting digestion, and liver protection.

Ingredients

Light Soy SauceTo taste

Clean the matsutake and dry it with kitchen paper towels. Slice it and keep two slices from the middle for later use; dice the rest into small cubes.

Mix the egg with 100ml of warm water until well combined.

Strain the egg mixture through a sieve.

Add the matsutake cubes to the egg mixture along with a small amount of salt. Do not add too much salt because light soy sauce will be used for flavor after steaming. Use a container with a lid if possible; otherwise, cover tightly with cling film.

Place in a steamer with cold water and steam for about 15 minutes after the water boils. Heat some butter or olive oil in a non-stick pan and pan-fry the reserved matsutake slices until golden on both sides.

Arrange the pan-fried matsutake slices on the steamed egg custard and drizzle with a little light soy sauce.

Cooking Tips
