Steps

Mash the steamed purple sweet potato into a fine texture and let it cool to hand temperature. Add it to the mixing bowl along with the butter.

Add dry yeast and mix well.

Add sugar and flour, and mix evenly.

Thoroughly knead the flour and purple sweet potato together. This will also make the sweet potato smoother.

Gradually add milk (adjust the amount based on the moisture content of the sweet potatoes and flour) until a crumbly texture forms.

Add an appropriate amount of water to the steamer, place the purple sweet potato buns inside, and cover with the lid to ferment. Let them double in size (fermentation time may vary depending on room temperature).

After fermentation, turn the stove to medium heat. Once the water boils and steam rises, steam for 15 minutes, then let it sit for 3-5 minutes before uncovering. Cooking Tips

1. The water absorption of flour and the moisture content of the sweet potato may vary, so adjust the amount of milk accordingly. 2. You can adjust the amount of sweet potato puree to your liking. More sweet potato puree results in a deeper purple color but slightly less softness; less sweet potato puree results in the opposite. 3. For a finer texture, you can mash the cooked sweet potato more and blend it with milk in a food processor. Personally, I enjoy the buns with small chunks of purple sweet potato 😁😁😁. 4. The finished buns are not overly sweet, so you can adjust the amount of sugar to taste. 5. Butter can be substituted with an equal amount of corn oil, but the milky flavor will be less pronounced.
