Prepare a box of gypsum tofu and chop some scallions for garnish.
Open the gypsum tofu package, scoop out large chunks with a spoon, and place them in a bowl.
Cover with plastic wrap (poke holes) and microwave on high for 2 minutes and 30 seconds. 🍎 Note: My microwave is 800W. Adjust the time slightly based on your microwave's power.
Remove from the microwave and drain any excess water. Seasoning: Sprinkle chopped scallions over the tofu pudding, add a generous spoonful of chili oil (the soul of the dish 😁), a pinch of salt, a tablespoon of aromatic vinegar, soy sauce, and a few drops of sesame oil.
Gently mix and it's ready to eat!
