Place all dough ingredients, except butter, into the mixing bowl.
Knead the dough until it is smooth and forms gluten, then add softened butter and continue kneading.
Knead until the dough can be stretched to form a thin translucent film with good elasticity.
Shape the dough into a ball, cover with cling film, and let it rise for the first proofing.
Let the dough rise to twice its size. Test by poking: if the hole doesn’t rebound, it’s ready ☑️.
Divide the dough into 6 equal portions, about 75g each. Roll each into a ball and let rest for 15 minutes (cover with cling film to avoid drying out).
Prepare the filling: 🧀 Mix cream cheese and sugar evenly.
Place the filling into a piping bag for later use ☑️.
Mix the multigrain toppings for use ☑️.
Roll the rested dough into a rectangular sheet, approximately 18*9cm.
Pipe a line of cheese filling.
Roll it up from top to bottom.
Spray the surface with water and roll it in the multigrain mixture to coat evenly.
Arrange them evenly on a baking tray and leave to proof for the final rise.
Rise until the buns are 1.5 times their size.
