Variety Flavored Mille Crepe Rolls (Can Be Used as Mille Crepes)
Replace 5g of matcha powder or cocoa powder with low-gluten flour for other flavors. This amount can make 25-30 crepes for a 6-inch size. For the matcha version, I like to make matcha and red bean flavor. For the cocoa version, I like to make Oreo and cream. To repeat, I have always used this recipe. The flour brand I use is 'Xinliang'. It has always worked perfectly, and this recipe is something I paid for and am sharing for free. There's no reason for me to post a wrong recipe to deceive anyone—it benefits neither you nor me.

Prepare a slightly damp towel and a non-stick pan for making crepes.
Mix egg liquid with sugar and milk until even. Add sifted low-gluten flour and mix well, then add the oil and mix again. Sift the mixture twice.
Slightly heat the pan, pour in one scoop of batter, and tilt the pan to spread it evenly. Cook over low heat.
Once bubbles form on the surface, it’s ready. No need to flip. Carefully remove and let cool. Place the pan on the damp towel to cool. Repeat for the next crepe.
Stack them alternately.
Spread cream in the middle section.
Fold the sides.
Roll it up and decorate.
