Oil-Free Amber Walnuts

For those on a diet who can't eat heavy snacks, this oil-free treat satisfies lonely mouths~

Ingredients

Walnutsto taste
Brown sugar/Ice sugar/Other sugars(Optional, but at least one type is needed)
Honey(Optional)
Sesame seedsto taste

Steps

Pre-roast the walnuts. Do not add anything, just put them in the oven and roast until fragrant.

Heat a non-stick pan on high heat without adding any oil. Add honey, ice sugar, and brown sugar, then lower the heat and caramelize (for reference, I used three small spoons of honey, two pieces of ice sugar, and one small spoon of brown sugar). Stir continuously in circular motions with a spatula (I didn’t use white sugar because it’s considered more cooling in nature, and I used brown sugar to make the color look nicer).

Add the walnuts and stir-fry them until coated with the caramel.

While hot, coat them in sesame seeds.

Plate it up—this is the sticky caramel version.

Cooking Tips

Regarding ingredient variations: a. You can use white sugar or just one type of sugar. Any sugar is fine for caramelizing. b. You can skip the sesame seeds. c. You can substitute with cashews or other nuts. Others: 1. Walnuts can also be stir-fried in a pan instead of roasted in an oven. Adding some oil when stir-frying makes them more fragrant. 2. You can mix and match the sugars as you like. 3. This is the sticky caramel version. Eating it requires some effort to separate the pieces. If you don't want it to be this troublesome, let them cool individually after caramelizing, then plate them.
