Oil-Free Home-Style Braised Pork, Delicious and Not Greasy!!

My son 👦 loves braised pork. Today, I'm sharing an easy and delicious braised pork recipe to make at home. It melts in your mouth, is fatty but not greasy, and totally addictive~

Ingredients

Pork Belly500 grams
Dried Chili3 pieces
Star Anise2 pieces
Cinnamon Stick1 small piece
Rock Sugar20 grams
BeerHalf a bottle
Green Onion, Ginger, GarlicAs needed

Clean the pork belly and cut it into mahjong-sized cubes (drain the water to avoid oil splatter). Pan-fry until both sides are golden. Note ⚠️ fry on low heat to render the excess fat, which can be saved and used for cooking—it’s super fragrant ☺️.

Add a small amount of oil to the pan, along with a handful of rock sugar, and stir-fry over low heat until it turns reddish-brown (be careful not to overheat, as it may turn black and taste bitter). This step requires a bit of patience—the key to delicious braised pork is getting the color right 👍 for a glossy, reddish appearance!

Once the caramelized sugar is ready, add the pork belly and stir-fry until evenly coated. Add green onion, ginger, dried chili, star anise, cinnamon, 2 tablespoons of light soy sauce, and 1 tablespoon of dark soy sauce.

Pour in half a bottle of expired beer 🍻 and enough hot water to cover the ribs. Bring to a boil over high heat, then simmer over low heat for about an hour. Finally, remove the spices and reduce the sauce over high heat—don’t reduce it too much.

Cooking Tips

Ladies 👭, if you're a beginner and have never caramelized sugar before, skip this step. Many cooks burn the sugar, making the dish taste bitter. You can directly add rock sugar instead—while the color may not look as good, the taste will be similar ☺️☺️.
