Dried Oyster with Hua Diao Pork Belly (No Oil, No Water)
Recipe inspired by Chef Huang's braised pork. My picky husband replaced huangjiu with Hua Diao wine, giving the meat a brighter red hue, and added dried oysters, making the flavor incredibly delicious!

Pork Bellygrams
Hua Diao Wine (a bottle)to taste
Gingerto taste
Soy Sauce, Salt, Oyster Sauceto taste
Rock Sugarto taste
Steps

Cut the pork belly into Mahjong-sized pieces. Add a small amount of oil to a pan, heat it, and sear the pork belly.

Sear the pork belly until slightly golden.

Crush the ginger with a knife.

Pour Hua Diao wine into a cast iron pot and bring it to a boil. Add the seared pork belly, dried oysters, and season with soy sauce, oyster sauce, and salt. Simmer the meat on low heat.

Add rock sugar and simmer for another ten minutes until the sauce thickens.
