Cooking Tips

1. This recipe uses 2 gelatin sheets, approximately 10g. If using gelatin powder, substitute accordingly. 2. Coconut milk can be replaced with regular milk, and adding some heavy cream makes the texture smoother—choose according to your taste preference. 3. Since papayas vary in size, the needed amount of coconut milk will also vary. I scooped out the papaya seeds, filled it with drinking water, and poured the water into a measuring cup to determine the required coconut milk quantity. If you don't have a measuring cup, you can use a digital scale. As long as you stick to a 50:1 ratio of coconut milk to gelatin, it should work. During summer, I increase the amount of gelatin for a firmer texture.
