Peanut Sesame Candy
Ingredients
Steps
Rinse raw sesame seeds (skip this step if using roasted sesame seeds) using a sieve under running water, then dry them thoroughly. Put them in a pan and stir-fry on low heat until lightly golden, then transfer them out to cool.
Place raw peanuts in a pan and stir-fry over low heat until cooked, then let cool.
Rub the cooked peanuts between your hands and blow away the peanut skins.
Place the roasted peanuts into a plastic bag and crush them lightly with a rolling pin, leaving each peanut in 2–3 pieces. This reduces the space between the peanuts and sesame seeds, saving sugar and making the candy less sweet.
Heat a pan, add vegetable oil, and melt the white sugar over low heat.
When the syrup turns brown, add the juice of half a lemon. If unavailable, you can use white vinegar. Using lemon juice or vinegar will make the candy crisp and delicious. Lemon juice helps cut the sweetness, enhancing the flavor.
Continue stirring over medium-low heat. The syrup will form large bubbles, so keep a close watch.
When the bubbles become smaller and fewer, add the peanuts and sesame seeds, then stir.
Once the peanuts and sesame seeds are evenly coated with the syrup, pour the mixture into an oiled container and press flat with a spatula or spoon.
Let cool for about 10 minutes. Before the candy hardens completely, use a knife to cut it into your preferred shapes. Once it fully hardens, it becomes very crisp and may break when cut.
Store the cut candy in an airtight container. For an even prettier presentation, wrap the pieces in candy paper.
