Super Flavorful Braised Pork Belly with Quail Eggs
The pork belly I bought this time has such perfect marbling, it would be a waste not to make braised pork with it.
Ingredients
Pork Belly250g
Quail Eggs20 pieces
Rock SugarAbout 10 pieces
SaltHalf a spoon
Dark Soy Sauce1 spoon
GingerA few slices
Green OnionLarge sections
Cooking Wine1 spoon
Light Soy Sauce4 spoons
Star Anise3 pieces
Cinnamon StickA small piece
Bay Leaves3 pieces

Put the chopped pork belly into a cold pan.

Stir-fry the pork belly until golden brown and the fat is rendered out.

Scoop out the pork. Caramelize rock sugar in the pan, then add the pork back in. Stir-fry until the sugar evenly coats the pork, then quickly add water.

Add 4 spoons of light soy sauce, 1 spoon of dark soy sauce, 1 spoon of oyster sauce, half a spoon of salt, half a spoon of pepper, green onion, ginger, and dried spices. Add enough water to just cover the pork by a finger's width.

Simmer over low heat for half an hour, then add the quail eggs.
