Peel and slice the potato into thin strips, then rinse with cold water.

Mix the potato strips with the sour cabbage and marinate, allowing the potato strips to fully absorb the flavor of the sour cabbage.

Chop the dried chili peppers, slice the scallions, garlic, and ginger into small pieces.

Heat oil in a wok, then add the chopped dried chilies, scallions, garlic slices, and ginger strips to stir-fry until aromatic.

Add the marinated potato strips and sour cabbage, stir-fry thoroughly.

Season with salt, sugar, and light soy sauce, then continue stir-frying until the potato strips soften (approximately 1.5 minutes). Turn off the heat, drizzle with a little sesame oil, and mix with scallion slices before serving.
