Stir-fried Pickled String Beans with Minced Pork

A very appetizing dish that's perfect with rice

Ingredients

Pickled String Beans250g
Minced Pork100g
Dried Chili Peppers10 pieces
Ginger1 small piece
Vegetable Oil4 tablespoons
Cooking Wine1 tablespoon (15ml)
White Pepper Powder1/4 teaspoon (1g)
Light Soy Sauce2 tablespoons (30ml)
Dark Soy Sauce1/2 teaspoon (3ml)
Sugar1/2 teaspoon (3g)
Sesame Oil1/4 teaspoon (1ml)

Steps

Soak the pickled string beans in clean water for 20 minutes, wash thoroughly, squeeze dry by hand, and chop into small pieces.

Place minced pork in a bowl, mix with cooking wine, dark soy sauce, vegetable oil, and white pepper powder, and marinate for 5 minutes. Peel and mince the ginger, and cut dried chilies into small sections.

Heat oil in a pan on high heat until 70% hot, add the minced pork, quickly stir-fry until the pork changes color and is cooked, then remove from the pan.

Add more oil to the pan, heat on high until 40% hot, sauté minced ginger and chopped chili until fragrant, then add the chopped pickled string beans. Reduce heat to medium-low and stir-fry for at least 3 minutes.

Return the cooked minced pork to the pan, add light soy sauce and sugar, stir-fry evenly for 2 more minutes, and drizzle in sesame oil before serving.

Cooking Tips

1. Since pickled string beans are salted, it is best to soak them in water for 20 minutes before frying. If you’re short on time, you can chop them into small pieces and rinse them multiple times, though this might affect the taste. 2. Ensure the pickled string beans are fried thoroughly to achieve a good texture. Stir-fry for no less than 3 minutes. Additionally, there are no strict ratios for the ingredients—a generous amount of pickled string beans for lovers of the tangy flavor or more minced pork for meat lovers works fine. 3. Adding a bit of vegetable oil while marinating the meat creates a protective layer that helps retain moisture during cooking, resulting in a more tender texture.
