Crispy Pine Nut Cookies

Soften the butter and mix with powdered sugar until smooth.
Add egg yolk and slightly beat.
Add pine nuts and gently mix well.
Sift in low-gluten flour and mix until no dry powder remains, forming a perfect dough.
Place the dough into a storage bag and then shape using a cookie mold. If no mold is available, use a ruler to shape. (If the weather is too warm and the mixed dough becomes soft, refrigerate briefly before shaping.) (If you prefer round shapes, slightly shape into a cylinder, then freeze for 2 minutes before shaping. This will allow you to easily form a perfect cylinder.)
Once the dough is hardened and shaped, cut into appropriately sized cookie slices and place onto a baking tray.
Place into a preheated oven at 180°C. Bake at 180°C for 14 minutes. (Oven temperatures vary; use this as a reference.)
