Portuguese Egg Tart

A dessert loved by family and friends that is incredibly simple and fast to make, the perfect companion for afternoon tea! This egg tart was the first dessert I learned when I started baking, and I eventually came up with my own recipe. Now, all my friends are using it!

Ingredients

Low-gluten flour10 grams
Heavy cream180 grams
Milk140 grams
Granulated sugar40 grams
Egg yolks4
Frozen tart crustsLarge 12 / Small 24

Steps

Put the egg yolks into a clean bowl, add granulated sugar and stir until dissolved. Then, add low-gluten flour and mix until smooth and without lumps.

Add sifted low-gluten flour and mix thoroughly until smooth and lump-free.

Pour 180 grams of heavy cream into Step 1 and mix well (heavy cream should be warmed to room temperature after taking it out of the fridge).

Add 140 grams of milk and stir until fully blended and lump-free.

Prepare a clean container and use a sieve to strain the tart mixture twice to make it smoother and silkier. Let it sit for 5 minutes.

Preheat the oven to 200°C for 10 minutes. Prepare tart crusts (large: 12 / small: 24) and fill each crust 80-90% full with the tart mixture.

Place the trays in the middle-upper rack of the oven and bake at 200°C for 20 minutes until the tart tops turn golden brown.

Cooking Tips

1. Make sure to adjust the temperature based on your own oven's performance, especially in the last 5 minutes. Watch for the tart's surface coloring to achieve a perfect golden finish.
