Thaw the pork ribs and soak them for half a day, changing the water periodically to remove blood.
Wash the shiitake mushrooms and soak them in water. Do not discard the soaking water. Cut the potato into chunks.
Prepare the green beans by snapping off ends by hand and washing thoroughly.
Prepare spring onion, garlic, chili, star anise, cinnamon, bay leaf, and fennel.
